Healthy French Toast Recipe

                French toast is infamous for being unhealthy but delicious.  With this recipe however, it only needs to be the latter, replacing the unhealthy with healthy.
    - 1 slice wholemeal bread
- 1 egg
- j¼ cup milk
- ¼ teaspoon cinnamon
- 1 teaspoon vanilla
- ½ cup blueberries or raspberries
- ricotta cheese
- maple syrup
Put the berries in a pan and put onto moderate heat.  Cook until the berries have turned saucy.  You can rupture the berries with a fork to make it easier.
Beat the egg with the milk and cinnamon and soak the bread in the mixture on both sides until all the liquid has been absorbed. 
In a pan, melt some coconut oil and put the soaked bread in, cook on both sides until golden brown.  Once done, serve on a plate with the berry compote spread on top.  Serve with a dollop of the ricotta cheese and maple syrup (if you wanted sweeter.)
